Recipe: Jase’s Chicken Soup

Happy Monday!

If you live in Colorado you know about the Spring Blizzard we got this weekend (heck, it might still be snowing come Monday morning). And even if you don’t live in CO you can appreciate a delicious and nutritious recipe for those snowy days or perhaps after a strength session or outdoor workout.

My husband Jason was motivated to get to the store before the storm and pick up some groceries for his Chicken Soup recipe. He actually used the rotisserie chicken I had picked up a few days prior for dinners and snacks. It’s always great when you can use your groceries to the fullest. Especially when it comes to animal protein sources. The bones from the chicken carcass are loaded with nutrients!

Did ya’ll know that bone broth is a great source of glycine, glucosamine, collagen, and really high in vitamins and minerals (calcium, magnesium, potassium, and more!) that support joint health, recovery, and immunity to name a few. This is the perfect combination for anyone that is active 😉

Here are the quick steps you can take to make Jason’s Chicken Soup:

  • Put rotisserie chicken in crockpot with water + 2T Apple Cider Vinegar and cook down overnight.
  • In the morning, strip the meat off and discard the carcass.
  • Feel free to pick off a few strips of chicken to feed to your furry loved ones. Our cats and dog each get a few scraps of chicken and a little homemade broth to drizzle over their food. They LOVE it! Hey, when you don’t have kids you have to spoil your fur babies.
  • Put chicken back in the crockpot.
  • Add chopped carrots, celery, onion.
  • Season with garlic salt, pepper, parsley, bay leaves.
  • Let it cook down overnight.
  • You can add some gluten free pasta, noodles, rice, or carb of choice to boost your fiber and carb intake. We choose to make the carb separately so it wouldn’t get too soggy with leftovers.

We had a fun day yesterday awaiting the blizzard. I went for a 2.5 mile walk with Molly and then we had our neighbors/friends over for a group workout/double date. We did the Deck of Cards workout. As the snow started falling pretty hard I took Molly out for a short walk and really really long ball game. But trust me. We also did our fair share of binge TV watching last evening. It’s all about balance 😉

For dinner we enjoyed this hearty soup last nite and had Daiya GF DF Strawberry Cheesecake for dessert.
