Ode to Buffalo

I spent this past weekend in Chino Hills, California for a Dietitian Nutrition Coach Mastermind Retreat. I was able to soak up a little sun (while CO gets more snow), get some fun hikes/workouts, AND also connect with over a dozen of other Nutrition Coach’s, and biz mentors. It was a weekend of learning, and I can’t wait to share some of it with ya’ll. But I’m saving that for another blog 🙂

If you’ve followed me for awhile, you probably know that my Dad and my husband, Jason, are die hard Buffalo Bills fans. I grew up in Rochester, NY (lived there for 26 years before moving to CO) and it’s Bills country there. Fast forward something like a decade + later and I met Jase, a very active member of the Bills Mafia (aka family).

Well, anyone that knows football, knows that the Buffalo Bills lost to the KC Chiefs in the AFC Divisional Playoffs, in a heartbreaking game 2 weeks ago.

In honor of the Bills, I’m sharing with you our fave Buffalo Chicken recipe. It’s a GREAT source of protein and can be added to so many combos. We often pair it with some roasted veggies + sweet potato fries OR I’ve used it for tacos, salad, and even as a veggie dip.

Grilled Buffalo Chicken Recipe

Prep:

  • Trim fat off of chicken breast and lightly season with garlic salt and pepper (we use Kinder’s ‘The Blend’ from Costco) and toss in Buffalo Sauce (We personally prefer Frank’s Red Hot- made in Buffalo, NY).
  • *Throw them on the grill!
  • In a separate bowl, mix together Frank’s, ghee/butter, and Kinder’s Blend.
  • Stir lightly to mix ingredients.
  • Once the chicken is done on the grill, toss it in the Buffalo Sauce and viola!
  • This is super easy AND really tasty (spicy) – probably our favorite.

*Mofication: I know ya’ll might not be firing up your grill in the winter. I hear ya. Have no fear. This recipe is also adaptable for the crock pot! Lightly coat the the crock pot with ghee and throw in chicken, Buffalo Sauce, and seasoning. Set pot overnight. When cooked, you will gently shred the chicken.
