Do ya’ll meal prep? Prepping meals is usually defined as cooking/batch cooking some food/recipes in advance. We usually do a larger food prep on Sunday’s (because we generally have more time vs the work week) and then often do some smaller prep thru-out the week.
On Sunday we went to the Parker Farmer’s Market with Molly. See picture below 😉 We got all of our veggies and fruit for under $30 (including the $1 watermelon!). We got our usual $15 bag at Miller Farms stand – red potatoes, sweet potatoes, golden potatoes, beets, snap peas, cucumber, zucchini, and cauliflower. Then we got some palisade peaches and cherries for $12 at the stand right beside Miller’s.
By the way, YES, you can eat watermelon. And NO it doesn’t have too much sugar.
We will do a bit of meal prepping Sunday which will set us up for success for the coming week.
Here is what’s on our menu for the week (items purchased at Farmer’s Market + Sprouts/Target/Costco):
Roasted Potatoes
Roasted Beets
Roasted Cauliflower
Grilled Zucchini
*For all roasted/grilled dishes we drizzle coconut oil or ghee + sea salt, pepper, garlic salt seasoning & roast in the oven @ 425 until desired crispiness
Sliced cucumber + snap peas with sea salt (to snack on)
Watermelon + Peaches + Cherries + Oranges (store bought)
Chocolate Zucchini Muffins (mainly for breakfast)
Turkey Tacos (using ground turkey, taco mix, shredded lettuce, guac, salsa, grain free hard shell tortillas)
Leftover Bison Hotdogs + Bison Burgers
Turkey Burgers
Chicken Apple Sausages
Ground Bison
Salad in a bag + MYO dressing
